To mitigate compression time and parsing time on servers on which several domains are hosted, we process the log rotations every days and we keep logs for a year (due to law). This means that you can have 365 log archives per log file. You could script something to move some old archives to another place (eg. remote server backup).
You could also edit the /etc/logrotate.d/apache2 logrotate configuration file but this is not recommended.
