I know how to change the language of the complete user GUI from the admin interface.
Is there a possibility to use several languages at the same time?
Something like a
"choose language" option on the login screen ?
So that at least the end user would be able to use another language than the standard language for his GUI ?

as far as I can see I can only set ONE global language in the system settings?
I did neither see something where I can set the GUI language on a per-client base nor did I see something like a possibility for the end-user client to choose his language on the log-in menu ?

Login as any user and go to Profile -> Language. Anything you set there is just for the current user.
